Well, damn it, the Kiwis have done it to us again.
This Tripel would not be out of place in any Trappist Monastery where they had been perfecting their brew for the past four centuries. The St Joseph’s has so much flavour, so much going on, but created in a way that comes together in a sweet, malty, spicy, alcohol fuelled delight.
Tripels should always be drunk in a chalice if you have one. This beer will last for ages if you want to cellar for a while and is best given a light roll before opening to unsettle the sediment.
